Recipe Grilled Sweet Potato Fries

This is a great way to enjoy sweet potatoes that doesn’t require much work in the kitchen.
Just three ingredients and you have a great vegetable side dish that plays well with almost everything.

Cutting them into long narrow wedges speeds up the cooking time and you get 1-2 servings per potato.

Recipe-
Grilled Sweet Potato Fries

Ingredients-
Sweet Potatoes, nice straight ones, 1-2 servings per potato depending on their size
Olive Oil, for drizzling
Key West Spice Company® Southernmost Blend, to sprinkle

Equipment-
Sharp knife
Cutting board
Bowl
Tongs
Gas or charcoal grill

Directions-
Rinse sweet potatoes under cold water and wipe dry.

Prepare and start your grill for direct cooking over high heat.

Place sweet potatoes on chopping board and carefully cut in them in half the long way, then cut the halves in half again, and give each quarter one more cut. Trying to keep them equal in size. Depending the size of your potatoes, you should be able to get at least 8 wedges.

Place potato wedges in a bowl and drizzle with olive oil, toss to coat. Sprinkle oiled wedges with Southernmost Blend and toss to season.

Using tongs place sweet potatoes skin side down onto the hot grill going cross ways with the grates, so they do not fall into the grill.
After about 3-5 minutes, or when you begin to see black spots, you want to turn them onto one side.
After another couple of minutes or when you begin to see black grill marks, rotate them to their third side, that hasn’t been exposed grill surface, for another couple of minutes and they’re ready to be served.
