Ultimate Burger A.K.A. Cheeseburger in Paradise

Springtime is about getting outside and that also means the return to grilling season. It’s also a great time for grilling burgers with family and friends. It begins with good ingredients and proper preparation. Nothing wrong with purchasing already grounded chuck or pre-formed 1/4 lb. patties, just make sure you have Island Grill on hand. But if you have the time, the process makes for the best burgers ever. Purchasing a little bit of beef sirloin, brisket & short rib then grinding it up yourself makes for a moist and delicious burger. The key is to keep it cold during the process. Keeping it cold avoids the meat getting over worked and mushy. To do this freeze your equipment first. Put your blade attachment, food processor bowl and sheet pan in the freezer before beginning. Do not over work the meat when forming your patties. The end result will be a burger that won’t be soon forgot. Serve with Grilled Sweet Potato Fries Recipe: Island Grill Steak Burgers Serves 4 Ingredients: 8 oz. Beef Brisket, cut into 1 inch cubes 8 oz. Beef Sirloin, cut into 1 inch cubes 8 oz. Beef Short Rib, cut into 1 inch cubes (may need to buy 1.5 lbs. on the bone to net 8 oz.) Key West Spice Company© Island Grill 4 Brioche, potato or egg buns. 4 slices of American cheese (cheddar & gouda work too you know) Red Onion sliced into rings Tomato slices and green leaf lettuce and pickles if like it like that. Equipment: Food Processor Sheet Pan Parchment Paper Cast Iron Skillet or Cast Iron Cooking Surface with lid or stainless steel domed shaped bowl. Metal Spatula Directions: Put food processor blade attachments and bowl into freezer. Place cubed meat on a sheet pan lined with parchment paper and put into freezer for 10 minutes to chill. Remove processor equipment and meat from freezer. Grind all meat cuts together and gently form 4- 6 oz. patties, be sure not to overwork the meat. Season patties lightly with Key West Spice Company© Island Grill Seasoning (both sides please). Heat cast iron over medium-high heat. Place burgers in heated pan, may need to do in batches so they fit without touching. Let burgers cook on 1 side 3 to 4 minutes, turn and top with cheese. Cover with lid or domed shaped bowl and cook for another 3 minutes. Place cooked burgers on toasted buns, garnish as you please with red onion, lettuce and tomato. Share the Love!
