Yellowtail Filet

A good fish sandwich starts with a good filet of fish.
The Yellowtail snapper is an abundant species of snapper native to the Florida Keys and is highly prized for its light, flaky meat and is considered to be one of the best of the snapper family.
Most anglers pursue yellowtail snapper during the warmer months, but they can be caught throughout the year.
It’s also the species of fish that you will most commonly find in the restaurants and fish houses throughout the Florida Keys.

It would be hard to find someone who has fileted as many of these beauties as Ramon Rodriguez of the Rusty Anchor Seafood Restaurant. He’s been doing it for over 40 years.

This particular fish is a good sized one too!

    We love the Rusty Anchor and that had to be one fresh fish.

    Yes it is Steve. We love the Rusty Anchor too and the fish was fresh just like all the fish at the Rusty Anchor in Key West.
